  • 1 lb spaghetti
  • 2 large eggs + 2 egg yolks
  • 1 cup grated Parmesan cheese
  • 1 lb boneless, skinless chicken breast, diced
  • 6 slices of bacon, chopped
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a bowl, whisk eggs, egg yolks, and grated Parmesan. Set aside.
  3. Cook bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving the grease.
  4. In the same skillet, add diced chicken. Season with salt and pepper, and cook until golden. Add minced garlic and sauté until fragrant.
  5. Reduce heat to low. Add cooked spaghetti and toss with the chicken and garlic.
  6. Remove skillet from heat and quickly stir in the egg and Parmesan mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Add bacon back into the pan, toss well, and season with salt and pepper.
  8. Serve immediately, garnished with chopped parsley.
