  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8 flour tortillas (or corn tortillas)
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion over medium heat until beef is browned and onions are tender. Drain excess grease.
  • Season the beef with garlic powder, chili powder, cumin, salt, and pepper. Mix well.
  • Spread 1/2 cup of enchilada sauce on the bottom of a 9x13-inch baking dish.
  • Divide the beef mixture evenly among the tortillas, add some shredded cheese, and roll them up tightly.
  • Place the rolled tortillas seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining shredded cheese.
  • Bake for 20 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped cilantro, if desired, and serve hot.

  • For extra flavor, add diced green chilies or black beans to the beef filling.
