Ingredients

  • 12 oz rotini pasta

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red onion, sliced thin

  • 1 cup black olives, sliced

  • 1 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • 1/2 cup Italian dressing (or homemade)

Instructions

  • Cook the rotini pasta according to package instructions. Drain and rinse under cold water.

  • In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.

  • Pour the Italian dressing over the mixture and toss until well coated.

  • Refrigerate for at least 30 minutes to allow flavors to meld.

 

  • Garnish with fresh parsley before serving.

Notes

  • You can substitute feta with mozzarella or cheddar cubes.
